Rosanna Pansino's Got An Ingenious Trick For Making Rainbow Cloud Cupcakes

The Nerdy Nummies star shows you her no-fail technique for an absurdly cute treat.

Rosanna Pansino can't stop laughing. She's about to film her intro, but she can't get the words out as she wipes back tears.

"Things are going well. Perfect," she quips after regaining her composure. The Nerdy Nummies star gamely hopped onto the counter to pose with the TheNextTycoon sign, only to have the frame topple on her, causing a domino effect that knocked an entire vase of sunflowers — water and all — onto her lap.

Some stars might flip a table and walk off set at that point. Pansino chose to laugh, later posting to Facebook about how she "only fell in the sink once!"

That's the thing about Pansino — that bubbly, "hey, let's hang out" character she portrays on her hit YouTube channel, Nerdy Nummies, is exactly who she is in real life. As her following's grown, she may have expanded from an $80 Flip camera to full, professional lighting and a team to help her create her pop culture-related cooking videos, but it seems her approach to life (and baking in general) hasn't changed: Keep it real, keep it fun.

Two years after releasing her first cookbook, Pansino's launched a cross-country tour — in a bus she designed to look like a giant cake — to promote her bakeware line with Wilton. Instead of slapping her name on anything vaguely cooking-related, Pansino took a step back and focused on the things she wished existed when dreaming up treats in her kitchen, like color-coded piping tips that make it easy to know which tip to use to frost a cake a certain way. Or the unique, lightning and stars sprinkles she used to trick out her cloud cupcakes.

Even the 8-bit heart design on the piping bags serves a purpose. "When I first started out, I never knew how high to fill the frosting in the bag, so I thought, 'Wouldn't it be great to have a line to tell you how far to fill it up?'" she says. The heart decoration at the top of the bag serves just that purpose, so you never overfill it — and wind up squeezing frosting out of the top of the bag.

Pansino tries to simplify everything, so it's easier for fans of all ages to copy her designs, and these cupcakes couldn't be simpler to master. Just use any buttercream frosting you'd like — store-bought is totally fine, she says — fill it into a piping bag fitted with a large, round tip, and plop a series of frosting blobs all over the top of each cupcake.

Give the cupcakes a few minutes to rest, so the frosting can set a bit, then use a small spatula to round out each frosting blob, making it look fluffy and cartoon-y.

"You can't go wrong," she says. "No cloud is alike."

Even if they wind up seriously deformed, there's a silver lining: The end product's guaranteed to be TheNextTycoon.
