Start out by preparing your chocolate cake batter (from the red box!). Scoop into a lined muffin tin, filling the liners halfway up, and then, the best part: nestling a tiny little cheesecake bite in the middle of each! Our favorite cheesecake bites come from Target. They're the perfect size and shape for the job. To be honest, we bought three boxes and picked out 12 of the plain ones, but feel free to use the flavored squares — save some dough! If you can't hunt these down, ain't no shame in cutting up a whole frozen cheesecake into bite size pieces.
Top the cupcakes off with a bit more batter and bake for 25 minutes. While your cupcakes cool, make the chocolate buttercream. BTW, this frosting is sure to become your new go-to. It's totally dreamy thanks to a cocoa powder, a double dose of vanilla, and a nice pinch of salt to really get the tastebuds going. Plus, a touch of heavy cream at the end thins it out into a perfectly smooth, creamy consistency.
Pipe your cupcakes, top with lots of rainbow sprinkles (duh), and dig in. Sweet tooth: solved.
