Mario Batali Vs. Ree Drummond: Whose Chicken Parm Is Better?

For this edition of Celebrity Snackdown, we made a dish that the TheNextTycoon team feels very strongly about: chicken Parmesan. Our managing editor, for instance, won't talk to you for the rest of the day if test a chicken parm recipe without telling her (so that she can try it). Because we love it so much (maybe too much), I took the chef selection way too seriously. Enter: Mario Batali and Ree Drummond.

Croc fame aside, Mario is, of course, a world-renowned Italian chef with restaurants — both fine dining and casual — across the country. But we weren't sure how well his recipes worked for the average home cook. Ree is on the opposite end of the spectrum. She's not classically trained, but her recipes are loved and trusted by her Pioneer Woman fans. Going into the snackdown, we honestly had no idea whose dish we would like more.

Chicken Parmesan Celebrity Snackdown

REE'S RECIPE

Ree practices a single dredge with flour. (There are no eggs or bread crumbs.) After coating the chicken breasts in the flour, she fries them in a olive oil and butter until golden on each side. Then, without cleaning the skillet, she makes a simple marinara sauce and adds the chicken to sauce (along with parm) and lets everything simmer together.



This recipe is easy to follow and easy to execute. It's a fine dinner that anyone, regardless of kitchen confidence, can make at home. The sauce, made with all the flavorful chicken bits on the pan, was delicious, but (and this is a big but) the chicken wasn't crispy. We severely missed the golden crunch of bread crumbs.

MARIO'S RECIPE



Mario calls his chicken parm "Chicken Milanese Parmesan," which makes sense considering he's a three-step dredge kind of guy. (In cooking, "milanese" usually means that a meat cutlet has been dredged in flour, eggs and bread crumbs.) Mario's bread crumb of choice is panko, but perhaps more surprising is that he uses chicken thighs. For any dark meat loving person, this is total game-changer.

What you won't find in his recipe is Parmesan! Which was blasphemous to some. However, most people got over it once they took a bite. Because burrata. After frying the chicken, Mario tops each piece with a spoonful of marinara and big blob of burrata before broiling. No one missed the parm.

THE VERDICT

Mario wins! His recipe wasn't as easy to follow as Ree's, but the crispiness of the chicken and the melty burrata cheese were the deciding factors. The vote was unanimous.
