It's safe to say that we have a s'mores obsession here at TheNextTycoon. We make s'mores skillet cookie cakes, s'more mini tarts, s'mores milkshakes—and there was that time we made s'mores out of Easter candy just because we damn felt like it. So it doesn't come as much of a surprise that s'more nachos would be right up our alley.
The most annoying part about your everyday s'more is that you go through the trouble of roasting the marshmallow and melting the chocolate, and then two bites (and about 17 napkins) later, the whole thing is gone. The true beauty in this amazing dessert is the basic fact that it's bulk s'mores for a crowd: A baking dish is filled with sweet chips, covered in the marshmallows and chocolate, and then baked.
It's hard to imagine making s'mores any messier than they already are, but these nachos manage to do it (as nachos in general tend to do): You're digging chips out of the bottom of dish, and getting through three melty layers to do so. So know in advance that you have to be committed to the goodness. But when there are s'mores involved, we're happy to go the extra distance.
