These Jack O' Lantern quesadillas are the cutest thing to ever happen to Halloween. They prove that festive treats don't just have to be sweet! They're a fun, interactive craft you can eat. Score! Plus, honestly, who doesn't love a cheesy chicken quesadilla?
The real MVP of this recipe is the humble flour tortilla. While flour tortillas are not totally authentic, they're amazingly pliable and forgiving, making them perfect for decorating—not to mention, they crisp up perfectly in the oven. Using a sharp paring knife, cut a Jack O' Lantern face into a few tortillas and set aside as you prepare your filling.
Mix shredded rotisserie chicken (or your own leftovers!) with lime juice, chili powder, and garlic powder for an addicting, tangy base. Scatter on top of your uncut tortilla, top with lots of cheese, and place on the Jack O' Lantern's face. Brush with olive oil to ensure extra crispiness, and bake for 15 minutes.
